Did you know today is national grilled cheese day?!
It is rainy and dreary here today, with a few of our kids home due to school quarantining restrictions. I am so thankful today's work schedule does not include a Noon Zoom video call, so I can just make grilled cheese for anyone who's hungry.
The grilled cheese sandwich has truly become the comfort food for some of our family members. This is no surprise to me. I've been making them for years...and years...
Growing up, grilled cheese was a sandwich that my dad would willingly make for me or my friends as we showed up tired and hungry after sports, on weekends, or on rainy days like today.
In our own home, friends of our children have started coming over late at night to just hang...and the grilled cheese seems to be frequently on the menu.
Even yesterday afternoon, somewhere between the lunch hour and the dinner hour, a request for some sandwiches came in from one of the kids and a friend. Yes, I gladly fulfilled the request.
As cliche as it sounds, I have found if I’m wearing my apron and putting a lot of love into the task, it doesn't matter what kind of bread, what kind of cheese, or if I add ham. In the end, hopefully it is the memory of being fed and loved that will matter most.
